I used to not be a big breakfast eater. I would just drink 2-3 cups of coffee, and wait until around 11am and then eat a big lunch. This presented several problems; the first was that it caused me to become addicted to high levels of caffeine in the morning in order to produce the level of energy that I desired. It also meant that I was starving my body from around 8pm the night before until 11am the next morning. I’m sure I don’t have to explain to you that why that is not the best method to a healthy, balanced diet.
Once we switched to a plant based diet, I learned the importance of making sure you eat a lot of plants, and eat them often. My go to breakfast now is oatmeal, and when I have the time, a fresh juice with a lot of fruits and vegetables. I prefer juicing over smoothies simply because I don’t care for the texture of smoothies quite as much. However, there are a few added benefits to consuming your fruits and vegetables in smoothie form, one of which is the benefit of added fiber. Fiber is an essential part of our diet, and when you eliminate the actual flesh of the produce, you miss out on some of the digestive benefits of added fiber. We are a house divided on this subject. My husband loves green smoothies, and I prefer juice. The choice is yours!
Here is one of my favorite juice recipes that I like to call “Wake You Up Red Juice”. It is packed with earthy flavors from the beets and carrots, and finishes with a great spice from the ginger and jalapeno.
Wake You Up Red Juice
- 3 Carrots Quartered
- 3 Celery Stalks Quartered
- 1 Red Beet Quartered
- 2 inch Ginger Root Peeled
- 1 Pluot Halved, Seed Removed
- 1/2 Jalapeno Seeds Removed
- 1/2 Lemon Peeled
- Combine fruits and vegetables in juicer. Enjoy!*Can substitute Peach or Nectarine for Pluot.
